Abruzzeo’s cuisine includes typical dishes, like pasta (rigorously hand-made), lamb, legumes and saffron. Meat plays an important role, as in all pastoral cultures. Particularly used are the lamb and “castrato” (male adult sheep), grilled or baked in the oven. A traditional dish is “arrosticini”, thin grilled kebabs, made with “castrato”.
