Pizza dolce
(Sweet pizza)
Ingredients
For the sponge cake:
10 eggs, flour (1 tablespoon for every egg).
For the filling:
8 yolks,
8 small teaspoons of flour,
8 teaspoons of sugar,
1 liter milk,
a packet of cinnamon,
lemon rind,
butter,
as much rum and alkermes as you like, cream,
some candied cherries,
coffee.
Preparation
Whip the egg whites separately.
Add the yolks followed by sugar, and flour (a heaping tablespoon for every egg).
After mixing, grease a deep baking pan with butter and pour in mixture. Bake at
200°C
In the meantime mix the filling and boil for 5 minutes.
Remove from the flame and spread the cream on a tray and let it cool.
Remove the sponge cake for the oven and let it cool. Cut it horizontally into
two parts. Moisten one of the faces with rum and espresso coffee and the other
with alkermes.
Spread the cream on all the flat surface and put cake back together again.
Decorate with cream any candied cherries.
Note: On one of the 2
parts of the sponge cake you could spread chocolate instead of cream.
